Could you make the Glitzy Chocolate Puddings with milk chocolate, as I am not a lover of dark chocolate, or half and half? Also do you need to grease the ramekins with butter before you use them?

Nigella's Glitzy Chocolate Puddings are light chocolate sponges that are served warm with a chocolate glaze (a warm chocolate sauce). The sponge puddings are made with good quality dark chocolate (preferably minimum 70% cocoa solids) and we would not change this at all as milk chocolate has a much higher level of fat and lower level of cocoa solids than dark chocolate and this will affect the flavour and texture of the sponge. For the sauce you could use a half and half mixture of dark and milk chocolate, i.e. 75g each of dark and milk chocolate. Milk chocolate also has more sugar than dark chocolate and an all milk chocolate sauce could be a little sweet when served with the Crunchie bars.
The puddings are served in the ramekins, warm from the oven, which means that you don't really need to grease the ramekins before using them for this dessert. But if you prefer you could brush the ramekins with a little melted butter before using them.
