Our answer

Nigella's White Chocolate And Passionfruit Mousse (from NIGELLA SUMMER) has a mixture of raspberries and passionfruit topped with a soft white chocolate mousse. The mousse is a simple combination of melted white chocolate plus egg yolks and whisked whites and sets to a silky, voluptuous texture. Unfortunately you can't just substitute dark chocolate for white chocolate here as the two set very differently and you would need to adjust the ratios of chocolate to eggs to get a similarly soft mousse. The flavour contrast between the fruit and the mousse will also be different.

If you wanted to try a dark chocolate mousse then we would suggest Nigella's Instant Chocolate Mousse, which also sets to a soft texture. This makes 6 small servings, so you would not need quite as much fruit if using this mousse. You could also mix raspberries and passionfruit together and leave them to macerate for a couple of hours (or longer, if in the fridge) and then serve them on top of, or alongside, the Instant Chocolate Mousse or your favourite dark chocolate mousse recipe.
