Can the Chocolate Raspberry Pavlova be made a couple of days in advance if stored in an airtight container? Many thanks.
Our answer
Nigella's Chocolate Raspberry Pavlova (from Nigella Summer and on the Nigella website) has a chocolate meringue base that is fairly soft inside. It can be made ahead and our preference would be to make it just one day ahead and store it in an airitght container in a cool, dry place.
If you are making the meringue more than one day ahead then the weather can affect the keeping qualities of the meringue. If it is very humid or wet then the meringue will tend to turn soft very quickly and you won't get the effect of the crisp crust and soft interior. However if it is dry then it may keep for 2 days, but the crust may still soften a little. Don't top the meringue with cream and berries until just before serving.
