What substitution can I make for the coffee in the Chocolate Raspberry Pudding Cake? I am not a coffee drinker and do not like anything with coffee in it.
Could I use cherries instead of raspberies in the Chocolate Raspberry Pudding Cake?

Nigella's Chocolate Raspberry Pudding Cake (from HOW TO EAT) has a light, almost mousse-like texture. It contains coffee as the liquid helps to give the cake a lighter texture and the coffee helps to enhance the flavour of the chocolate. You should not be able to taste the coffee in the cake, but if you prefer to omit it then we suggest using just 370ml/ 1½ cups water and adding 2 teaspoons of vanilla extract instead.
It may be possible to use pitted fresh or frozen cherries in the cake. However they tend to be a little denser than raspberries so our concern would be that the cherries will sink to the bottom of the cake as it bakes and as we have not tried the cake with cherries we are unable to guarantee the results. If you do try the cake with cherries then you may want to switch the Chambord for a cherry-flavoured liqueur such as kirsch or a cherry brandy.
