Cooling Baked Brownies

Full question

Hello, I'm going to make Nigella's Brownies recipe (the large tray yielding 48 pieces). Do you cool the brownies in the tin or out of the tin? The recipe just states to bake it for 25 mins and doesn’t suggest how to cool them. Thank you!

Nigella's Brownies (from HOW TO BE A DOMESTIC GODDESS) are particularly good piled up and served in lieu of a birthday cake. For squidgy brownies you should bake them until a cake tester inserted into the centre comes out with damp crumbs attached.

As the brownies are gooey it is difficult to remove them from the baking tin quickly as they can break up easily when warm. We suggest leaving the brownies until they are completely cold, then lifting the sheet of brownies out of the tin using the baking parchment (parchment paper) and cutting them into squares. It may help, in terms of time management, to bake the Brownies in the evening and then leaving them overnight to cool and set.
