Full question
I'm one of the unfortunates for whom cilantro is a very unpleasant taste. What other herb could I use in the Spiced Bulgur Wheat With Roasted Vegetables please, and still keep the character of the dish?
Our answer
Nigella's Spiced Bulgur Wheat WIth Roast Vegetables (from COOK, EAT, REPEAT) is a wonderful vegan dish or can be used as a side dish to accompany simply cooked meats or fish. The bulgur wheat is spiced with garlic, fennel, coriander, cumin and chilli and some chopped fresh coriander (cilantro) is added at the end.
Bulgur wheat is used in tabbouleh along with a mixture of herbs, often coriander, parsely, mint and dill. So if you don't like the taste of fresh coriander then omit the chopped stalks from the bulgur wheat and maybe look to use one or a mixture of these other herbs to add just before serving. However, mint can be quite assertive so we would suggest using it alongside another herb rather than just on its own.
