Are the cranberries in the Cranberry-Studded Mincemeat fresh or dried? If fresh, can I use frozen? I ask because I live in Singapore and don’t think I can find them fresh here.
Our answer
Nigella's Cranberry-Studded Mincemeat is a home-made filling for the Star-Topped Mince Pies (from NIGELLA CHRISTMAS) and contains both dried and fresh cranberries. If you can't get dried cranberries then you could use 30g of dried cherries or extra raisins instead. If the dried cherries are large then roughly chop them or snip them in half before you use them.
Frozen cranberries can be used instead of fresh cranberries. We suggest using them direct from frozen and when you add them to the sugar and port let them cook for about 5 minutes over a low heat so that they start to thaw slightly before you add the other ingredients and continue with the recipe.
