Our answer

Nigella's Crunchy Chicken Cutlets (from SIMPLY NIGELLA) are coated with coarsely crushed cornflakes rather than regular breadcrumbs. The cornflakes give a particularly crunchy carapace when the cutlets are cooked.

We suspect that it would be possible to use oat flakes instead of the cornflakes, however they would need to be the type that are similar to cornflakes where the oat flakes are made from cooked and rolled grains (for example Oatibix flakes) and not a whole oat that has been rolled or crushed, such as rolled oats, quick cooking oats or old fashioned oats. The crushed or rolled type of oat flakes will not crisp up when cooked and will be quite hard after cooking. Also if you wish to make the cutlets gluten free then check that the oat flakes are suitable for coeliacs, as brands can vary.
