Nigella's Hummus With Seared Lamb And Toasted Pine Nuts (from HOW TO EAT) has a home-made hummus that is topped with strips of stir-fried lamb and toasted pine nuts. Nigella suggests using strips of ready-prepared lamb for stir frying.

Lamb is quite a versatile meat but we suspect that you would find it easiest to use lamb leg steaks for this recipe. Leg steaks are usually quite lean and often sold boneless. Remove any fat or sinew from the outside and cut the steaks into thin shreds or small dice, cutting across the grain of the meat. You will need 150g (6 ounces) of prepared strips. The crispy parts of some slow cooked lamb shoulder would also be fantastic scattered over the cool and garlicky hummus. For a recipe try Nigella's Warm Shredded Lamb salad With Mint And Pomegranate.
