Nigella's Chicken Shawarma (from SIMPLY NIGELLA) is an easy oven version of spit-grilled chicken. Skinless, boneless chicken thighs are marinated with a spicy oil before being cooked in a hot oven. Chicken thighs are good for this dish as they remain moister than breast meat during cooking.

It is easy to buy skinless, boneless thighs in the UK but can be a bit more difficult in other countries. It is possible to use chicken thighs on the bone but we suggest that you remove the skin so that the flavours of the marinade can penetrate the meat more easily. If you are eating the chicken in wraps or pita breads then you will need to cut the cooked meat away from the bone before serving it. The cooking time for thighs on the bone should be roughly the same, but check carefully after 30 minutes as if the thighs are large they may need an extra 5 minutes or so in the oven to cook through completely.
