Decorating Chocolate Fruit Cake

Asked by MooshK. Answered on 26th November 2017

Full question

Hi there, I am going to make the Chocolate Fruit Cake this year and I'm wondering if Nigella decorates it? If so what with? Would marzipan and royal icing be too much? Thanks.

Our answer

Nigella's Chocolate fruit Cake (from FEAST is a popular alternative to a traditional fruit cake. It is also good as a last-minute cake as it is very moist and does not require any maturing. Nigella likes to decorate the top of this cake with chocolate coated coffee beans, or coffee flavoured chocolate beans, along with a sparkling array of edible gold coloured decorations such as gold stars, gold dragees and edible gold glitter. However remember to remove any small decorations before serving if the cake is being eaten by younger children.

The cake has a tendancy to sink slightly in the centre, so if you did want to decorate it with marzipan and icing then it is a good idea to turn the cake upside down so that the flat base is on top. You will need to brush the cake with a little warmed marmalade or apricot jam before adding the marzipan and let the marzipan dry for a day or two before adding royal or rolled fondant icing.
