Decorating Clementine Cake

I was hoping to make the Clementine Cake for my three year old birthday as she can't have wheat but will this cake still taste good with marzipan and/or icing decorations?

Our answer

Nigella's Clementine Cake (from HOW TO EAT) is a popular gluten-free cake. It has a close texture so is fairly robust and should hold up to some icing, but as the top can sink a little as the cake cools you may need to turn the cake over so that the base gives a flat surface for decorating.

The cake is quite moist, so if you wanted to use a rolled fondant icing then you would probably need to put a thin layer of marzipan underneath, otherwise the moisture from the cake would soften the fondant icing. We suspect that a royal icing would make the cake too sweet. As the cake already contains almonds the marzipan should go with the flavour of the cake, but it is very much a matter of personal preference. Store the cake in a cool place once iced and we suggest icing it no more than two days ahead.
