I would like to bake and ice the Devil's Food Cake the day before required. Will it store overnight and still remain fresh the next day?

Our answer

Nigella's Devil's Food Cake (from KITCHEN) is a rich chocolate cake with a ganache-style frosting. It is possible to make and ice the cake ahead and if you are making it a day ahead we would suggest icing the cake as soon as the sponge layers are cold. Cover the fisnished cake with a cake dome or a large upturned bowl, or put it in an airtight container, and store in a cool place overnight. The frosting may form a slight crust on the surface, but this does not affect the taste. Frosting the cake will help to prevent the sponge from drying out overnight.

The cake can also be baked a day ahead and when the layers are cold they can be wrapped tightly in clingfilm (plastic wrap) and stored in an airtight container overntight. They can also be frozen, tightly wrapped in a double layer of clingfilm and a layer of foil, for up to 3 months. Defrost on a wire rack at room temperature for about 3 hours. We would suggest making the frosting just before using. The cake will keep for 2-3 days in an an airtight container.
