Do I Use Regular Mascarpone For The Mascarpone Cream Served With The Venetian Carrot Cake?

Asked by Lcanaparo. Answered on 17th June 2022

Full question

In the Venetian Carrot Cake recipe it calls for mascarpone cream. Mascarpone cream usually has sugar, raw eggs in it and some type of liquor. Am I supposed to make this and then add more liquor and sugar? Or am I meant to use plain mascarpone and just add the sugar and liquor to it? Thank you.

Our answer

Nigella's Venetian Carrot Cake (from KITCHEN) is a gluten-free cake that is different in style to the more familiar American layer cake. Nigella serves the cake with a mascarpone cream, as a nod to cream cheese frosting.

If you look at the ingredients list, the mascarpone cream is made from scratch using plain/regular mascarpone cheese and adding icing (confectioners') sugar and rum. So it is similar to the mascarpone cream you describe and you do not need to start with mascarpone cream and then add extra sugar and rum. However, if you do have your own favourite mascarpone cream recipe, you could of course serve this with the cake instead or Nigella's version.
