Double Cream for Cherry Cheesecake

Full question
I no longer live in the uk so cannot get double cream, can you suggest a suitable substitute for the Cherry Cheesecake? Cream here seems to be maximum 35% fat.
Our answer
Nigella's Cherry Cheesecake (from Nigella Express and on the Nigella website) is a no-bake cheesecake that is made from a combination of cream cheese and whipped cream. In the recipe Nigella uses double cream but we appreciate that this is fairly unique to the UK.
You can however use any form of fresh cream that you can whip and a 35% fat cream should be fine. Use a well-chilled bowl as this will help the cream to achieve a good volume when you whip it. Fold the whipped cream into the softened cream cheese following the recipe instructions. Whipping cream that has been whipped can separate slightly if left standing for too long, but as it is mixed with the cream cheese in the cheesecake it should be more stable, so this should not be a concern.
