I don't cook with alcohol. What could I use in place of the white wine/vermouth for the Chicken With 40 Cloves of Garlic?

Nigella's Chicken With 40 Cloves Of Garlic (from KITCHEN) is an easy slow roasted chicken dish. The garlic remains in whole cloves so that it becomes sweet and sticky as it cooks.
Dry white vermouth is used to add a little extra liquid and flavour. If you can't use alcohol then you could replace it with chicken or vegetable stock, or try using 1 tablespoon of water plus 1 tablespoon of fresh lemon juice. The acidity of the lemon juice will mellow as the chicken cooks but will still brighten the rich juices of the chicken.
