Is it possible to make the Easy-Action Christmas Cake gluten free please? I’m wondering if I can replace the flour with a gluten-free plain flour blend.
Our answer
Nigella's Easy-Action Christmas Cake (from FEAST) is a simple melt-and-mix cake that contains sweetened chestnut puree (sometimes called chestnut spread). The chestnut puree helps to make the cake moist, so that it doesn't need any maturing before being eaten.
We suspect that the cake could be made with a plain gluten-free flour blend (all-purpose baking mix). However, gluten-free flours tend to absorb more liquid so it may help to replace some of the flour with ground almonds (almond meal). We would suggest trying half gluten-free flour and half ground almonds. The cake will also be more crumbly than a standard rich fruit cake. We would mention that as we have not tried the cake in gluten-free form, we are unable to guarantee the results.
