Do you have any suggestions for easy salads that will appeal to children?
Our answer
Some children love vegetables and others can be more challenging as they won't touch anything green. Most children like carrots as they are slightly sweet and you could try Nigella's Rainbow Room's Carrot And Peanut Salad (from Nigella Summer and on the Nigella website). It is a favourite of Nigella's and reminds her of her childhood. Another one to try is the Watermelon, Feta and Black Olive Salad (from Nigella Summer and on the Nigella website). Lots of children like watermelon and you can omit the olives if they are too strong. If you can't get feta then use another firm, mild cheese.
Cherry tomatoes are often popular and Nigella's Old Fashioned Tomato Salad (from Nigella Summer and on the Nigella website) is worth considering. The home-made salad cream dressing is fairly mild and can be good on salad leaves, or as a dip for vegetable sticks. Nigella's son loves a salad called Panzanella. This is a salad made from ripe tomatoes, slightly stale bread and basil. The bread soaks up the sweet juices from the tomatoes and it is best made a day ahead which can be useful if you are busy. Nigella's recipe is in her book Kitchen (p150).
