Easy Sticky Toffee Pudding

Asked by sunitapillai. Answered on 28th February 2013

Full question

In step 3 of Nigella's Easy Sticky Toffee Pudding, it says to "pour over the boiling water". Do I pour it directly over the cake mixture before putting it into the oven? Will it all get mixed in squishy?

Our answer

Nigella's Easy Sticky Toffee Pudding (from Nigella Bites) is a type of self-saucing pudding, where the pudding emerges from the oven with a sponge cake on top and a sauce underneath. This type of pudding is deceptively easy to make and saves having to prepare a separate sauce.

It may sound a bit strange but you do indeed sprinkle the dark muscovado sugar over the cake batter in the baking dish, dot on the butter and then carefully pour the boiling water over the top of the whole lot. When the dish goes into the oven the water, butter and sugar mix together. As the cake batter bakes and rises the sauce mixture drops through it and forms a sticky sauce on the bottom of the dish.
