Full question
I made the Easy Sticky Toffee Pudding as per the recipe and cooked it for 55 minutes, but on serving the sauce at the bottom was liquid. Certainly not sticky.
Our answer
Nigella's Easy Sticky Toffee Pudding (from NIGELLA BITES) is a self-saucing pudding that takes inspiration from the classic sticky toffee pudding, with a date-studded sponge and a toffee-like sauce. Sugar, butter and water are put onto the surface of the uncooked sponge batter and as the pudding bakes these ingredients form the sauce below the sponge.
The sauce from these types of puddings tends to thicken quite quickly as the liquid will be absorbed by the sponge as it stands. If you serve up the pudding the minute it comes out of the oven then it may be slightly on the runny side, but if you let the pudding stand for 5-10 minutes before serving it then the sauce should thicken a little. If you would like extra sauce, you may like to make some of Nigella's Salted Caramel Sauce to go alongside.
