Can Eggnog Cream and Brandy Butter be made ahead of Christmas Day?
Our answer
Nigella's Eggnog Cream (from NIGELLA CHRISTMAS) is whipped cream flavoured with advocaat. Advocaat is a liqueur made from eggs, sugar and brandy and so is similar to eggnog. If you are making the cream with British double cream then you can make it a couple of hours ahead and store it in the fridge, loosely covered, until needed, though it will become firmer as it stands and so we would prefer to make it just before using. If you are using whipping or heavy cream then we suggest making the cream just before serving, as whipping and heavy creams have a lower fat content than double cream and do not hold as well. However the Eggnog Cream is very quick to make.
Bourbon Butter, Rum And Brandy Butters (also from NIGELLA CHRISTMAS) and most "hard sauces" can be made a week ahead and stored in an airtight container in the fridge. They can also be frozen in an airtight container for up to 3 months. Defrost overnight in the fridge before using.
