Our answer

Nigella's Chicken And Pea Traybake (from AT MY TABLE) is a one pan dish that roasts chicken thighs on top of a mixture of frozen peas and roughly chopped leeks. The peas and leeks soften and sweeten in the oven whilst the chicken roasts, giving crisp skin and moist meat. The cooking time is approximately 1 hour and 15 minutes in a hot oven (200c/180 Fan/400F).

Unfortunately we would not recommend substituting the chicken with fish as the cooking time is too long. Even a whole side of salmon takes only about 20-30 minutes to cook at this heat and overcooked fish has an unpleasant texture. It may be possible to cook the peas and leeks first and add some fish later, but we have not tried this and you would probably need to adjust the amount of liquid in the pan. However, for a technique to oven poach fish try Nigella's Asian-Spiced Kedgeree or for pan-cooked salmon try the Tarragon Salmon.
