Flourless Brownies As Blondies

Full question
Hi, do you think I could make Nigella's Flourless Chocolate Brownies as blondies? Love the texture so I would like to emulate it in a blondie/white chocolate form.
Our answer
Nigella's Flourless Chocolate Brownies With Hot Chocolate Sauce (from NIGELLA EXPRESS) uses ground almonds (almond meal) in place of flour. As well as being gluten-free, the brownies have a very moist texture. Blondies are bars that are usually made without dark chocolate or cocoa.
It may be possible to make a blondie version of Nigella's Flourless Brownies, but unfortunately as we have not tested a version of this we are unable to advise on an exact recipe. However as white chocolate contains more fat and milk than dark chocolate, you would probably need to increase the quantity of chocolate and reduce the quantity of butter. You may also need to reduce the sugar slightly as white chocolate is much sweeter than dark. Instead you may like to try Nigella's White Chocolate And Macademia Brownies from HOW TO BE A DOMESTIC GODDESS which are very squidgy blondies, though they contain flour so are not gluten-free.
