Forgotten Pudding Fruit And Berries

Asked by ToneL. Answered on 4th February 2021

Full question

I would like to try the recipe for Forgotten Pudding, but I am allergic to strawberries, and both passion fruit and blackberries are hard to get where I live. Therefore, I would be grateful if you could suggest some alternatives. Would for instance raspberries and blueberries be all right?

Our answer

Nigella's Forgotten Pudding (from NIGELLA EXPRESS) is a meringue that is baked by being left (or "forgotten") in a turned off and cooling oven. The result is a marshmallow-like meringue that can be served with whipped cream and fruits.

Nigella suggests strawberries and blackberries for serving, but you can use any soft fruit that you like and is easily available to you. A slightly sharp fruit is a good foil for the sweet meringue and raspberries and blueberries would be fine. But you could also use roasted or poached forced rhubarb at this time of year (if available in your area), diced tropical fruits such as pineapple, mango, banana and papaya or even try Nigella's Caramelised Oranges. Blood (sanguinello/ruby) oranges would be particularly good for the Caramelised Oranges at this time of year.
