Forgotten Pudding Not Overnight

If I’m unable to make the Forgotten Pudding in the oven overnight, can I leave it in the oven all day instead?

Our answer

Nigella's Forgotten Pudding (from NIGELLA EXPRESS) is a soft, marshmallowy meringue topped with cream and berries. The texture is achieved by cooking the meringue in an oven that has been preheated and then turned off, so that the meringue sets in the gentle heat. The name comes from "forgetting" the meringue while it is in the oven overnight.

The suggestion of overnight coooking is mainly due to convenience, as it means not having the oven tied up all day. However if you prefer to make the meringue during the day then we would suggest allowing a minumum of 8 hours, and preferably 10 hours, for the meringue to stay in the oven. Also please note that if it is very wet or humid weather then it may be more difficult to get the meringue to set without being sticky, as the sugar in the meringue attacts moisture.
