Freezing Apple And Almond Cake

Full question

The Apple And Almond cake was delicious and easy to make for a non-baker! I lined my pan with some cherry halves before pouring in the mixture so I was left with a cherry layer on the bottom, yum. I was just wondering if the cake will freeze well?

Nigella's Apple And Almond Cake (from FEAST) is made with apple puree and ground almonds and is a lovely dairy free and gluten free cake. It is quite moist so keeps well in an airtight container in a cool place for 2 to 3 days or in the fridge for 5 days.

Adding cherries to the cake is a nice variation and we assume at this time of year they are fresh cherries. However if you add too many it could make the cake too wet. The Apple And Almond Cake in original form will freeze well. As the cherries are cooked the cake with the cherries in should also freeze, though you may get a slightly damp base when the cake defrosts as the cherries will let out some liquid as they thaw. To freeze the cake you may find it easier to leave the cake on the springform pan base, so that it has some extra support. Wrap the cake tightly in a double layer of clingfilm and a layer of foil and freeze for up to 3 months. To defrost the cake unwrap it and put on a wire rack in a cool place for 3 to 4 hours.
