Full question
I am making the Chocolate And Lime Cheesecake for someone (a prize in the school auction) and they have asked if they can freeze it. Can you let me know if you would recommend this? Thanks
Our answer
Nigella's Chocolate And Lime Chesecake (from Nigella Bites and on the Nigella website) is a baked cheesecake and usually baked cheesecakes will freeze as long as they have been made with full-fat cream cheese (i.e. not reduced fat or low fat cream cheese). However we have not tsted the freezing of this cheesecake so regreat that we cannot guarantee ythe results.
It would be safest to freeze the cheesecake in its tin as this will provide some protection in the freezer, in which case the cheesecake should be tightly wrapped in a double layer of clingfilm (plastic wrap) and a double layer of foil. Or if you have space in the freezer then unspring the cheesecake and freeze it uncoverdd until solid. Once the cheesecake is solid then wrap it tightly (still on the base) as above. The cheesecake will keep for up to a month in the freezer. To thaw the cheesecake unwrap it, put it on a plate and thaw overtnight in the fridge.
