Full question

Can you freeze the Coffee And Walnut Cake and how long can you keep it frozen? Also how do I defrost it for and should it be frozen with or without icing?

Our answer

Nigella's Coffee And Walnut Layer Cake (from KITCHEN) will freeze well but we recommend that you freeze the sponge layers without any icing on them. Wrap each sponge tightly in a double layer of clingfilm (plastic wrap) and a layer of foil and freeze for up to 3 months. To thaw the sponges unwrap the layers and stand on a wire rack at room temperature for 3-4 hours.

The buttercream icing can be frozen separately in an airtight container for up to 3 months. Thaw the icing overnight in the fridge and then remove the container from the fridge 1-2 hours before using so that it can come back to room temperature. Beat the buttercream briefly before using.

  • I've made this - it's a great cake. Personally what I had left I just put in a sealed tub and put in the freezer (iced and all) just took out a chunk when I wanted it and let it come up to room temp - was just as good! I tried to use it within a month.
