Hi, can I make ahead and freeze the Cranberry Bakewell Tart? And if so should I freeze it iced or un-iced? Thanks!

Nigella's Cranberry Bakewell Tart (from FEAST is a seasonal version of the traditional tart, using a home-made cranberry jam instead of raspberry jam. It is possible to freeze the baked tart, but it should be frozen without the royal icing, as the icing can turn sticky when it thaws.

To freeze the tart, let it cool completely after it has baked. We would suggest that you leave the tart in its tin as this will help to protect the tart when it is in the freezer. Wrap the tart tightly in a double layer of clingfilm and a layer of foil and freeze for up to 3 months. To thaw the tart, unwrap it and leave at room temperature for about 4 hours. Remove the tart from its tin and add the royal icing, plus any decorations, before serving.
