Freezing Honey Pie

Full question

Can you freeze the Honey Pie? It was delicious but we cannot eat it all at once. I see it lasts 3 days in the fridge but I'd rather freeze the remainder if possible.

Our answer

Nigella's Honey Pie (from SIMPLY NIGELLA) has a filling that is essentially a custard base sweetened and flavoured with honey. Custard-based fillings do not always freeze well and can sometimes have liquid seeping from the filling when thawed. This can slightly change the texture of the filling and can also mean that the pastry crust becomes soggy. So for quality reasons we prefer not to freeze the pie.

The pie will last for up to 3 days in the fridge. The crust can be baked ahead and frozen for up to 1 month, still in the tart tin, wrapped in a double layer of clingfilm (plastic wrap) and a layer of foil.
