Freezing Leftover Old Fashioned Chocolate Cake

Full question

I love the Old-Fashioned Chocolate Cake but find we can’t eat it all quickly, so I’d like to freeze slices to be able to enjoy it later.

Our answer

Nigella's Old Fashioned Chocolate Cake (from FEAST) is a moist chocolate sponge cake that has a sour cream ganache-type icing. It should be possible to freeze leftovers in slices, but you will need to open freeze the slices by laying them on a baking sheet lined with baking parchment (parchment paper).

Once the cake slices are solid they can be wrapped individually with food wrap and then put in a resealable container and stored in the freezer for up to 1 month. To thaw, unwrap slices and leave them on a plate at room temperature for 1-2 hours (the time will depend on how thick the slices are and the temperature of the room). Individual slices stale fairly quickly, so we suggest eating them within 24 hours.
