Freezing Unbaked Chocohotopots

I'm a glutton for Nigella's Chocohotopots, but even I can't finish multiple ramekins of them on my own. I tend to divide the recipe, which is very easy to do, and that gives me enough batter for two ramekins. Would I be able to freeze the second filled ramekin, or am I only able to keep it in the fridge to bake the next day?

Our answer

Nigella's Chocohotopots (from FEAST) are small, gooey chocolate cakes that are baked in ramekins. The regular recipe makes enough for 4 ramekins (approximately 150ml/2/3 cup capacity) and it is easy to make in a half quantity, for 2 ramekins, if necessary. If you do not want to bake the Chocohotopots immediately then you can refrigerate the filled ramekins for a day and bake from chilled, though you may need to allow 3-5 minutes extra cooking time.

It should also be possible to freeze the unbaked Chocohotopots. Wrap each ramekin tightly in a double layer of clingfilm (plastic wrap) and then put them in resealable plastic bags and freeze for up to a month. Thaw the ramekins overnight in the fridge then unwrap and bake from chilled, allowing slightly extra time, as mentioned above. It may be possible to bake the pots from frozen but unfortunately as we have not tried this we are unable to give guidance on oven temperatures and times.
