I would like to make the Crispy Lamb Chops but I don't have a food processor to make my own fresh breadcrumbs. Would Panko work adequately in this recipe?
Our answer
Nigella's Crispy Lamb Chops (from NIGELLA SUMMER) are lamb cutlets (Frenched lamb rib chops) that are beaten until thin and then coated in breadcrumbs and quickly shallow fried. The meat stays juicy and pink inside the crisp crust. It is possible to make fresh breadcrumbs by hand by grating slices of stale bread on the side of a box grater, using the zesting plane of the grater, or by using a Microplane or rasp-type grater. Just take care to protect your fingers whilst grating.
We suspect that you could use dried breadcrumbs instead of fresh, though we would prefer to use fresh breadcrumbs. Panko are Japanese dried breadcrumbs and can be particularly crisp when fried. If you are measuring by weight then the amount should be the same. If measuring by volume then you should use approximately 3½ cups of panko breadcrumbs or approximately 1¾ cups of regular dry breadcrumbs.
