Full question
I'm making Nigella's Irish Cream Tiramisu and it calls for espresso powder diluted in water for dipping the biscuits. I don't have access to espresso powder, but I do have an espresso machine. Can I use a couple of shots of espresso diluted with additional water instead? If so, what ratio of espresso shot to extra water would you recommend?
Our answer
Nigella's Irish Cream Tiramisu (from NIGELLA EXPRESS) is a variation on tiramisu that uses Baileys liqueur, a mixture of cream, whiskey and cococa. The sponge fingers are dipped in a Irish coffee-like mixture of coffee and Baileys.
The coffee mixture is quite strong as it uses 9 teaspoons of espresso powder to 350ml of hot water. This is roughly the equivalent of 9 espresso shots, so if you are using freshy brewed coffee then we would suggest making 9 shots of espresso and then adding enough hot water to take the total volume to 350ml.
