I have a huge sage bush. Would it be possible just to use fresh sage for the One Pan Sage And Onion Chicken And Sausage?

Our answer

Nigella's One Pan Sage And Onion Chicken And Sausage is a traybake that takes on the flavours of a traditional sage and onion stuffing (usually used for chicken). Dried sage is used in the marinade for the chicken and fresh sage is added at the end.

Dried sage has a more intense flavour, so if you did want to use fresh sage instead we would suggest that you use double the quantity of fresh sage to dried (i.e. use 2 tablespoons of fresh sage). It can be tricky to measure fresh leaves, especially if they are large, so roll the leaves up and slice them fairly finely (chiffonade) before you measure them and use only loosely packed tablespoon measures. We would also mention that we would not switch the fresh sage at the end of the recipe for dried sage as its texture is too dry. It is better to just omit it you don't have any fresh sage leaves available.
