Nigella's Garlicky Roast Potatoes With Oregano And Feta (from AT MY TABLE are cubes of potato that are roasted with minced garlic and dried oregano. The potatoes emerge from the oven golden and crisp on the oustside, soft in the centre and infused with flavour. This recipe should work with most types of white or yellow fleshed potato, though we would avoid using the small salad potatoes such as Anya, Ratte and fingerling potates as these can remain very firm when cooked.
All-purpose varieties, such as Maris Piper, Desiree or Yukon Gold, are good for this type of recipe as they soften when cooked but still hold their shape. The potatoes do not need to be parboiled before roasting as the cubes are not large (2-3cm or about 1 inch) and will cook through in the oven. The skins are also left on the potatoes.
