Ginger In South Indian Vegetable Curry

I am allergic to ginger - is there something I could substitute in your South Indian Vegetable Curry? I love curry and Oriental dishes but struggle with finding a substitute for ginger.

Our answer

Nigella's South Indian Vegetable Curry (from KITCHEN) is a coconut-based curry that is flavoured with chilli, ginger and turmeric. The ginger is in both fresh and dried form and gives a gentle, aromatic warmth. We note that there is no mention of an allergy to turmeric, which is from the same family as ginger, so we are not sure if the allergy is solely to ginger or extends to the other members of the Zingiberaceae family, but if it does then the turmeric should be left out as well.

You can omit the ginger from the curry (and turmeric, if necessary) and increase the amount of garlic by using regular vegetable oil instead of the garlic infused oil plus two cloves of garlic, which should be grated or minced and added at the same time as the fresh chilli.
