Hi! Would gluten-free ginger nut biscuits work in the no bake White Chocolate Cheesecake? Thank you.

Our answer

Nigella's White Chocolate Cheesecake (from AT MY TABLE) is easy to make but very impressive. The base is made from ginger cookie crumbs and the filling is a smooth and light mixture of white chocolate, cream cheese and whipped cream.

We suspect that it would be fine to use a gluten-free gingersnap cookie or gingernut biscuit. As the biscuits are already baked and are to be used as crumbs, gluten is not really an important factor in binding the base together. So we would use the same amount of cookies and butter as for the regular recipe. If you wanted to add a little extra butter to the base to help it bind more then we would suggest adding only an extra 15g (1 tablespoon), as if you add too much butter the base will be a little greasy.
