Can the Ultimate Christmas Pudding be made with gluten free flour?
Our answer
Nigella's Ultimate Christmas Pudding (from NIGELLA CHRISTMAS) is a steamed Christmas pudding that is packed with dried fruits. Traditionally Christmas puddings are made on Stir-Up Sunday, which this year is on 21st November 2021.
The pudding is made with fresh breadcrumbs and plain (all-purpose) flour. As the proportion of flour is relatively low, and the pudding does not have a spongy texture, we suspect that you could use a gluten free plain flour or all-purpose baking blend. You could also use a mixture of half gluten-free flour and half ground almonds (almond meal) to give a slightly moister result. You would also need to replace the fresh breadcrumbs with gluten-free fresh breadcrumbs, but now there are plenty of good quality gluten-free breads for sale so just use your favourite gluten-free white loaf for the breadcrumbs (we would avoid brown/whole wheat breads for the pudding). The pudding may crumble slightly when cut but unfortunately this is difficult to avoid with gluten-free flours. We would however mention that as we have not tried the Christmas pudding with these ingredients, we are unable to guarantee the results.
