Is it possible to convert your traditional Christmas Cake and Pudding recipes to gluten free just by flour substitution or do I need to do or add anything else? Thanks for your help.
Our answer
Nigella's Ultimate Christmas Pudding, Traditional Christmas Cake (both from NIGELLA CHRISTMAS) and Easy Action Christmas cake (from FEAST) can probably be converted to gluten-free versions. The plain flour should be substituted with an appropriate gluten-free flour mixture, though a mixture of half gluten-free flour and half ground almonds (almond meal) may give a slightly moister result.
For the Christmas Pudding you can use gluten-free breadcrumbs. However as we have not tried these in gluten-free forms we regret that we are unable to guarantee the results. You may also like to consider Nigella's Date And Marmalade Christmas Cake or Gorgeously Golden Fruit Cake as both of these are gluten-free and do not need the maturing time of a traditional fruit cake. The Christmas-Spiced Chocolate Cake is an interesting gluten-free alternative to the end of the festive meal.
