Is there a non-alcoholic alternative to the rum in the Golden Fruit Cake? Also, I do not have ginger jam. What can I use instead?

Nigella's Gorgeously Golden Fruit Cake (from NIGELLA CHRISTMAS) is a light alternative to the traditional rich fruit cake and is also gluten free. The dried fruits are simmered briefly with rum, butter, sugar and ginger jam so that they absorb the liquid and become plump and soft. If you can't use rum then fresh orange juice is usually a good alternative and the slight flavour of orange will go well with the other flavours.
Marmalade is a good replacement for the ginger jam. We would suggest using a fine-cut marmalade rather than a very dark and chunky marmalade. Please note that this cake does not keep as well as a traditional rich fruit cake and should be made only a week in advance of using. In hot weather the cake should be stored in a cool place.
