Grasshopper Pie Liqueurs

Hi! I live in India and can not source the curaco used in the Grasshopper Pie, what alternative can I use? Thank you.

Our answer

Nigella's Grasshopper Pie (from Kitchen) uses creme de menthe (mint flavoured) and white creme de cacao (chocolate flavoured) and not curaco (usually citrus flavoured). We assume that you are referring to the white creme de cacao.

Creme de cacao is made by distilling cocoa beans and has a slight chocolate flavour. As vanilla is one of the flavours used in making chocolate, and particularly white chocoate, we would suggest just using a couple of drops of vanilla extract instead. Most vanilla extract is a brown colour (the clear liquid is usually a synthetic vanilla flavouring rather than extract itself) so only use a couple of drops or it will affect the colour of the pie too much. You may like to use a couple of drops of green food colouring to help the colour of the filling. It is easiest to add the vanilla when you mix the creme de menthe into the cooled melted marshmallows.

When making the pie make sure that you don't let the marshmallow mixture boil as this could prevent the filling from setting. Also make sure the cream is properly whisked to soft peaks before folding in the cooled marshmallow mixture.
