Full question

Hi! For Nigella's recipe with Greek Squid and Orzo, could I do the recipe with squid rings instead of squid tubes? Thank you.

Our answer

Nigella's recipe for Greek Squid And Orzo (from SIMPLY NIGELLA) is a low-maintenance dish, where the squid and orzo are baked together in the oven. The recipe uses squid tubes and tentacles and the long, slow cooking leaves them soft and tender.

We suspect that rings could be used, but they probably need to be cut fairly thickly. As the squid becomes quite soft as it braises, thin rings could break up into small pieces on serving. We would also suggest adding the rings at the same time as the tomatoes and orzo, rather than cooking them initially with the fenned and onion, to reduce the risk of them being broken up. However, as we have not tried the recipe with squid rings we are unable to guarnatee the results.
