I love the sound of Nigella's Holiday Hotcake and will do it as an alternative pudding on Xmas Day. In the unlikely event there will be any left over for Boxing Day, will the sauce remain separate when it is cooled or soak into the cake part? I would like there to be sauce when reheated. Thanks
Our answer
Nigella's Holiday Hotcake (from Nigella Express) is a type of "surprise" pudding - when cooked you have a sponge cake on top and a hot sauce underneath which is served with the sponge. It is likely that you may not have enough sauce with leftovers for two reasons. First the sauce tends to ooze out as the pudding is served and will be scooped up with the portions served. Second the sponge cake will absorb some of the sauce as it cools.
However it is possible to supplement the leftovers with a caramel, butterscotch or toffee sauce. You could buy a good quality supermarket sauce or it is easy to make a sauce yourself from a very few ingredients - sugar, butter and cream. We would particularly recommend Nigella's Salted Caramel Sauce which can be kept in the fridge for a good week (and is wonderful with ice cream) or try the sauce from the Butterscotch Fruit Sundae (also from Nigella Express).
We would recommend that any leftovers of the Holiday Hotcake are covered tightly once cooled and kept in the fridge for up to 3 days.
