As I am wheat intolerant, can I use gluten free flour in the Honey Chocolate Cake? Also can I use gluten-free baking powder?
Our answer
Nigella's Honey Chocolate Cake (from FEAST) is a moist and tender chocolate cake with a sweet and shiny chocolate glaze. The cake batter itself is quite liquid, which suggests that it may be possible to make the cake with a gluten-free flour or baking mix. However the cake itself is quite tender when made with plain flour and we are worried that with gluten-free flour the cake will be too crumbly and also may sink quite a bit when it cools. So on balance we would not particularly recommend using gluten-free flour for this cake and unfortunately we have not been able to test the cake with gluten-free flour.
Bicarbonate of soda is usually gluten-free so there would be no particular reason to switch this for gluten-free baking powder. Nigella has several gluten-free cake recipes and we would particularly recommend the popular Chocolate Olive Oil Cake or NIgella's chocolate-studded Gluten-Free Banana Bread.
