If I need to make the Honey Pie without any milk products what would you substitute? Is it in any way possible?
Our answer
NIgella's Honey Pie (from AT MY TABLE) has a honey custard filling that is tempered with a sprinkling of salt. The pie crust is an easy to make press-in crust that includes milk and we suspect that you could use a non-dairy milk of your choice instead, as long as it is not a fat-free (non-fat) milk.
The filling is slightly more difficult as it includes double (heavy or whipping) cream. The fat content of these creams is above 30% and gives the filling extra richness. You probably can use a non-dairy cream alternative (such as almond cream), though these tend to be much lower in fat, at around 7%. Consequently, as mentioned, it may make the filling taste slightly different and we would avoid using coconut cream as the flavour of the coconut will fight with the flavour of the honey. As we have not tested the Honey Pie with these alternatives we are unable to guarantee the results and would also note that although plant-based milk and cream is used the pie is not vegan as the filling contains eggs.
