Hot Cross Buns With Wholemeal Flour
Asked by keg95. Answered on 14th April 2014
Full question
Hi, is it possible to use wholemeal bread flour instead of white bread flour in the hot cross buns? Presumably I'd have to add more liquid, any idea how much? thanks!
Our answer
Nigella's Hot Cross Buns (from Feast and on the Nigella website) are made with white bread (strong white) flour but it is possible to use wholemeal (whole wheat) breads flour as an alternative. We would however avoid using a multi-grain type flour as the texture of any whole grains or seeds in this flour could feel a bit odd in the buns.
Wholemeal flour tends to need slightly more liquid than white bread flour. However as all flours vary we would suggest adding the liquid stated in the recipe and mixing for a couple of minutes and then feel the dough. It should be soft and slightly damp. If it feels a little dry then add extra warm water, a tablespoon at a time.
You can also try a mixture of half white bread flour and half wholemeal flour.
