Can’t wait to try the Slime Soup! One question: how big is a ball of mozzarella? I live in Canada and the balls are varying sizes.

Our answer

Nigella's Slime Soup (from FEAST) is a pea soup that is thickened with the addition of mozzarella, which also gives the soup a creamier taste. It makes a spooky addition to a Halloween feast, but is equally good at other times of the year.

In the UK fresh mozzarella balls are a standard size of 125g (drained weight). This would be 4 1/2 ounces for the US and Canada, though you could use 4 ounces if that is a more convenient size for you. It should be fresh cow milk mozzarella. Buffalo mozzarella and burrata are more expensive and we would avoid using them for this dish. Also avoid using shredded mozzarella or the low-moisture mozzarella that you would normally use for pizza or gratins, as these won't melt in quite the same way or give the soup creaminess.
