Hi! Can you tell me if I can make the Pear, Pistachio and Rose Cake a day in advance and how you store it? Also would I complete the cake after baking or put the glaze on the day I serve it? Thank you!

Our answer

Nigella's Pear, Pistachio And Rose Cake (from AT MY TABLE) can be made one day ahead. It contains both ground almonds (almond meal) and pistachios and these help to keep the cake moist. Add the glaze just before you serve the cake and then scatter over the chopped pistachios and rose petals (if using).

Leftovers of the cake will keep in an airtight container in a cool place for up to 5 days after the cake has been baked. The pistachios will soften over time and you may prefer to remove the rose petals. In hot weather it is better to store leftovers in the fridge. You can remove slices of the cake from the fridge about 30 minutes before serving to let them lose their fridge chill.
