Nigella's Slow Roasted Garlic And Lemon Chicken (from NIGELLA SUMMER) is a very popular dish. The chicken pieces (or thighs on the bone) sit on a bed of garlic and lemons and are covered, then cooked on a low heat for 2 hours, until tender and almost falling off the bone. The chicken is uncovered and cooked in a hotter oven just to brown and crisp the skin and caramelize the cut edges of the lemon.
The chicken should remain moist as during the initial cooking time the chicken will cook in a combination of its own juices and the white wine in the pan. Make sure that the pan is fully covered with foil and that there is a tight seal around the edges, so that you do not lose too much liquid during cooking. When you uncover the chicken it should be already fully cooked, so you only need to roast on a higher heat just until the skin has become golden, and no longer.
