Nigella's Slow Roasted Garlic And Lemon Chicken (from NIGELLA SUMMER) is a very popular dish. The chicken pieces (or thighs on the bone) sit on a bed of garlic and lemons and are covered, then cooked on a low heat for 2 hours, until tender and almost falling off the bone. The chicken is uncovered and cooked in a hotter oven just to brown and crisp the skin and caramelize the cut edges of the lemon.

The chicken should remain moist as during the initial cooking time the chicken will cook in a combination of its own juices and the white wine in the pan.
